Ingredients

4 medium chicken breasts (1.5 lbs / 680 g)

1 cup (240 g) basil pesto

1 cup (120 g) shredded mozzarella cheese

¼ cup (25 g) grated Parmesan cheese

2 tbsp (30 ml) olive oil

1 tsp (5 g) garlic powder

1 tsp (5 g) onion powder

Salt and black pepper to taste
Instructions

Pat chicken dry, pound to even thickness, and season with salt, pepper, garlic powder, and onion powder.

Grease a baking dish, spread some pesto on the bottom, and arrange the chicken on top.

Coat the chicken with the remaining pesto.

Add mozzarella and Parmesan over each piece.

Bake at 400°F (205°C) for 22–25 minutes.

Broil for 1–2 minutes for a golden top.
