Ingredients

1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup long-grain white rice, rinsed

1 ½ cups chicken broth

1 cup pineapple chunks, fresh or canned

1 red bell pepper, diced

1 green bell pepper, diced

½ medium onion, finely chopped

2 cloves garlic, minced

2 tbsp soy sauce

1 tbsp hoisin sauce (optional)

1 tbsp vegetable oil or olive oil

½ tsp ground black pepper

½ tsp salt

1 tsp cornstarch mixed with 2 tsp water (optional)

1 green onion, sliced for garnish
Instructions

Prep ingredients by chopping vegetables and rinsing rice.

Heat oil in a skillet over medium-high heat and cook chicken until golden, about 3–4 minutes per side. Remove and set aside.

Sauté onion, garlic, and bell peppers in the same pan for 2–3 minutes.

Add pineapple chunks, soy sauce, and hoisin sauce, cooking 2 minutes to release juices.

Stir in rice and chicken broth, bring to a boil, then reduce heat and simmer, covered, for 15 minutes.

Return chicken to the pan and mix gently with rice and vegetables. Add cornstarch slurry if desired for thickening.

Garnish with sliced green onions and serve hot.
