- 2 cups fresh pineapple, diced
- 1/2 cup red onion, chopped
- 1 red bell pepper, diced
- 1–2 chipotle peppers in adobo sauce, minced
- 1 tbsp adobo sauce
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Peel and dice pineapple into small cubes.
- Chop red onion and red bell pepper finely.
- Mince chipotle peppers and mix with adobo sauce.
- Combine all ingredients in a large bowl.
- Add lime juice, salt, and black pepper.
- Fold in cilantro gently.
- Rest for 15–20 minutes before serving
