Ingredients

1 cup water

1/2 cup unsalted butter

1 cup all-purpose flour

4 large eggs

1 tablespoon granulated sugar

1 pinch salt

1 cup heavy cream

1/4 cup pistachio paste

2 tablespoons powdered sugar

4 oz dark chocolate

1/2 cup heavy cream

Chopped pistachios for garnish
Instructions

Preheat oven to 400°F and line baking sheets with parchment paper.

Boil water, butter, sugar, and salt until butter melts.

Add flour and stir until dough forms and pulls away from pan.

Cool slightly, then add eggs one at a time until smooth.

Pipe rounds onto baking sheets and smooth tops.

Bake until puffed and golden, then cool completely.

Whip cream with powdered sugar and fold in pistachio paste.

Melt chocolate with warm cream until smooth.
