- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup sour cream
- 3/4 cup chopped pistachios
- 1/2 cup brown sugar
- 1/3 cup chopped pistachios (for topping)
- 1 tsp cinnamon
- 3 tbsp melted butter
- 1/4 cup flour
- 1/2 cup powdered sugar
- 1–2 tbsp milk
Instructions
- Preheat oven to 350°F and grease a 9-inch cake pan.
- Mix brown sugar, pistachios, cinnamon, flour, and melted butter for the streusel topping.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until fluffy.
- Add eggs one at a time, then mix in vanilla.
- Stir in sour cream.
- Fold in dry ingredients and chopped pistachios.
- Spread half the batter into the pan.
- Add half the streusel topping.
- Spread the remaining batter over the top.
- Finish with the remaining streusel.
- Bake for 35–40 minutes.
- Cool slightly and drizzle with glaze before serving.
