Ingredients

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup granulated sugar

  • 1 large egg

  • 1 teaspoon pure vanilla extract

  • 2 cups all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 cup shelled pistachios, finely chopped

  • 1/2 cup powdered sugar (for rolling, optional)


Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • Beat butter and sugar until light and fluffy.

  • Mix in the egg and vanilla extract.

  • Whisk flour, baking powder, and salt; gradually combine with wet mixture.

  • Fold in chopped pistachios.

  • Roll dough into balls and optionally coat in powdered sugar; place on baking sheet 2 inches apart.

  • Bake 12–15 minutes until edges are lightly golden.

  • Cool on baking sheet for 5 minutes before transferring to a wire rack.
