Ingredients

1 cup (2 sticks) unsalted butter, softened

1 teaspoon pure vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking powder

1 cup shelled pistachios, finely chopped

1/2 cup powdered sugar (for rolling, optional)
Instructions

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

Beat butter and sugar until light and fluffy.

Mix in the egg and vanilla extract.

Whisk flour, baking powder, and salt; gradually combine with wet mixture.

Fold in chopped pistachios.

Roll dough into balls and optionally coat in powdered sugar; place on baking sheet 2 inches apart.
