Ingredients

  • 1 cup almond milk or dairy milk

  • 1/4 cup chia seeds

  • 1/2 cup pomegranate juice

  • 1 cup fresh or frozen raspberries

  • 2 to 3 tablespoons honey or maple syrup

  • 1/2 teaspoon vanilla extract

  • Pinch of salt


Instructions

  • Whisk almond milk, pomegranate juice, vanilla, sweetener, and salt in a bowl.

  • Add chia seeds while whisking to prevent clumps.

  • Let rest 5 minutes, then whisk again.

  • Cover and refrigerate for at least 4 hours or overnight.

  • Simmer raspberries gently until soft, then mash or blend.

  • Cool raspberry mixture completely.

  • Spoon chia pudding into glasses and top with raspberry layer.
