4 boneless, skinless chicken breasts

2 cups crushed pretzels

1/2 cup all-purpose flour

2 large eggs

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

1/2 teaspoon black pepper

3 tablespoons olive oil or melted butter

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 1/2 cups whole milk

1 1/2 cups sharp cheddar cheese, grated

2 tablespoons Dijon or whole-grain mustard
Instructions

Preheat oven to 400°F and line a baking sheet with parchment paper.

Set up three bowls for flour, egg mixture, and pretzel crumbs with seasoning.

Coat chicken in flour, dip in egg, then press into pretzel crumbs.

Place chicken on baking sheet and drizzle lightly with oil or butter.

Bake for 22–25 minutes, flipping halfway, until golden and cooked through.

Melt butter in a saucepan, whisk in flour, then slowly add milk until thickened.
