Ingredients

1 lb. elbow macaroni (or your preferred pasta)

2 cups cooked pulled pork (smoky or BBQ-flavored)

3 tbsp unsalted butter

3 tbsp all-purpose flour

3 cups whole milk

2 cups shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup grated Parmesan cheese

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and black pepper to taste

1/2 cup panko breadcrumbs (optional)

2 tbsp chopped fresh parsley (optional)
Instructions

Cook pasta al dente in salted water and drain.

Melt butter in a saucepan and whisk in flour to form a roux.

Gradually add milk, whisking until thickened.

Stir in cheddar, Monterey Jack, Parmesan, paprika, garlic powder, onion powder, salt, and pepper until creamy.

Fold cooked pasta and pulled pork into the cheese sauce.

Optional: Transfer to a baking dish, top with panko breadcrumbs, and bake at 375°F for 15-20 minutes.
