Turn leftover sourdough starter into golden, flaky apple hand pies that are quick, easy, and irresistible. Perfect for cozy snacks or festive treats.
Ingredients

1 cup (240 g) sourdough discard, unfed

2 ½ cups (312 g) all-purpose flour, plus extra for dusting

½ cup (115 g) unsalted butter, cold and cubed

¼ cup (50 g) granulated sugar

¼ tsp salt

1 tsp vanilla extract

¼ cup (60 ml) cold water, adjust as needed

2 medium apples, peeled, cored, and diced

2 tbsp brown sugar

1 tsp cinnamon

¼ tsp nutmeg
-
1 tbsp lemon juice

1 egg, beaten
Instructions

In a large bowl, combine sourdough discard, flour, sugar, and salt. Cut in cold butter until coarse crumbs form. Add vanilla and cold water gradually to form a dough ball. Chill 30 minutes.

In a medium bowl, mix diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Set aside.

Roll out dough to ⅛-inch thickness on a floured surface. Cut into 4-inch circles.

Place 1–2 tbsp of apple filling in the center of each circle. Fold over, seal edges with a fork, and brush with beaten egg.

Preheat oven to 375°F (190°C). Bake on parchment-lined sheet for 20–25 minutes or until golden. Cool slightly before serving.

Serve warm with optional caramel drizzle or vanilla ice cream.
