Ingredients

Scale
  • 1 cup (240 g) sourdough discard, unfed

  • 2 ½ cups (312 g) all-purpose flour, plus extra for dusting

  • ½ cup (115 g) unsalted butter, cold and cubed

  • ¼ cup (50 g) granulated sugar

  • ¼ tsp salt

  • 1 tsp vanilla extract

  • ¼ cup (60 ml) cold water, adjust as needed

  • 2 medium apples, peeled, cored, and diced

  • 2 tbsp brown sugar

  • 1 tsp cinnamon

  • ¼ tsp nutmeg

  • 1 tbsp lemon juice

  • 1 egg, beaten

Instructions

  • In a large bowl, combine sourdough discard, flour, sugar, and salt. Cut in cold butter until coarse crumbs form. Add vanilla and cold water gradually to form a dough ball. Chill 30 minutes.

  • In a medium bowl, mix diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Set aside.

  • Roll out dough to ⅛-inch thickness on a floured surface. Cut into 4-inch circles.

  • Place 1–2 tbsp of apple filling in the center of each circle. Fold over, seal edges with a fork, and brush with beaten egg.

  • Preheat oven to 375°F (190°C). Bake on parchment-lined sheet for 20–25 minutes or until golden. Cool slightly before serving.

  • Serve warm with optional caramel drizzle or vanilla ice cream.
