Description

Craving taco night but want it easier? This crockpot taco pasta is cheesy, cozy, and perfect for busy weeknights.


Ingredients

Scale
  • 1 lb. lean ground beef

  • 1 small onion, finely diced

  • 3 cloves garlic, minced

  • 1 packet taco seasoning

  • 1 can diced tomatoes with green chilies

  • 1 can tomato sauce

  • 1 cup beef broth

  • 2 cups uncooked medium pasta shells

  • 1 cup heavy cream

  • 2 cups shredded cheddar cheese

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • Optional toppings: cilantro, green onions, sour cream


Instructions

  • Brown ground beef in a skillet over medium heat. Add onion and garlic during the last few minutes. Drain excess grease.

  • Transfer beef mixture to crockpot. Stir in taco seasoning, diced tomatoes, tomato sauce, and beef broth.

  • Cover and cook on LOW for 3 to 4 hours or HIGH for 1.5 to 2 hours.

  • Stir in uncooked pasta and heavy cream. Cook on HIGH for 30 to 40 minutes until pasta is tender.

  • Stir in half the cheese. Sprinkle remaining cheese on top and cover until melted. Serve warm.
