Ingredients

  • 2 tbsp roasted peanuts, crushed

  • 1 tsp sesame oil (optional)


Instructions

  1. Slice cucumbers thin, lightly salt, and rest for 10 minutes, then pat dry.

  2. Whisk lime juice and sugar until fully dissolved.

  3. Stir in fish sauce, garlic, and chili.

  4. Toss cucumbers with dressing until evenly coated.

  5. Fold in cilantro and sesame oil, adjust seasoning, and top with peanuts before serving.
