Ingredients

  • 12 oz pasta of choice
  • 2 cups cherry tomatoes, halved
  • 6 cloves garlic
  • 3 tbsp olive oil
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp fresh basil, chopped
  • 1 tsp lemon zest (optional)

Instructions

  • Preheat oven to 400°F and place tomatoes and garlic on a baking sheet.
  • Drizzle with olive oil, season, and roast for 20 to 25 minutes.
  • Cook pasta in salted boiling water until al dente and reserve some pasta water.
  • Mix ricotta, Parmesan, basil, and lemon zest in a bowl.
  • Mash roasted garlic and add it to the ricotta mixture.
  • Toss hot pasta with the ricotta mixture and add pasta water as needed.
  • Fold in roasted tomatoes gently.
  • Adjust seasoning and serve warm
