- 12 oz pasta of choice
- 2 cups cherry tomatoes, halved
- 6 cloves garlic
- 3 tbsp olive oil
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional)
- 1 tbsp fresh basil, chopped
- 1 tsp lemon zest (optional)
Instructions
- Preheat oven to 400°F and place tomatoes and garlic on a baking sheet.
- Drizzle with olive oil, season, and roast for 20 to 25 minutes.
- Cook pasta in salted boiling water until al dente and reserve some pasta water.
- Mix ricotta, Parmesan, basil, and lemon zest in a bowl.
- Mash roasted garlic and add it to the ricotta mixture.
- Toss hot pasta with the ricotta mixture and add pasta water as needed.
- Fold in roasted tomatoes gently.
- Adjust seasoning and serve warm
