Ingredients

  • 2 tablespoons olive oil

  • 1 medium yellow onion, chopped

  • 2 medium carrots, diced

  • 2 celery stalks, diced

  • 4 garlic cloves, minced

  • 1 teaspoon dried rosemary

  • 1 teaspoon dried thyme

  • 1 bay leaf

  • 2 cans 15 oz cannellini beans, drained and rinsed

  • 4 cups vegetable broth

  • 1 cup water

  • 1 cup crushed tomatoes

  • Salt to taste

  • Black pepper to taste

  • Optional 2 cups chopped kale or spinach


Instructions

  • Heat olive oil in a large pot over medium heat and cook onion, carrots, and celery until soft.

  • Add garlic, rosemary, thyme, and bay leaf, then stir until fragrant.

  • Stir in crushed tomatoes and simmer briefly.

  • Add beans, broth, and water, then bring to a gentle simmer.

  • Mash some beans in the pot to thicken the soup.

  • Add greens if using and simmer until tender.

  • Remove bay leaf, season to taste, and serve warm.
