Description

These crispy sausage hashbrown bites are the ultimate crowd pleasing snack. Perfect for brunch, parties, or quick comfort food that everyone will grab first.


Ingredients

  • 1 lb breakfast sausage, cooked and crumbled

  • 3 cups shredded hashbrowns, thawed and drained

  • 1 cup shredded cheddar cheese

  • 1/2 cup shredded mozzarella cheese

  • 2 large eggs

  • 1/4 cup all-purpose flour

  • 1/4 cup milk

  • 2 tablespoons chopped green onions

  • 1 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon salt

  • 1 tablespoon olive oil or melted butter


Instructions

  • Preheat oven to 400°F and grease a mini muffin tin or line a baking sheet with parchment paper.

  • Cook the sausage in a skillet over medium heat until browned. Drain grease and let cool slightly.

  • In a large bowl, combine sausage, hashbrowns, cheddar cheese, mozzarella cheese, eggs, flour, milk, green onions, garlic powder, onion powder, salt, and pepper. Mix well.

  • Scoop about 1 to 1½ tablespoons of the mixture and press into mini muffin cups or form small balls on a baking sheet.

  • Brush the tops lightly with olive oil or melted butter.

  • Bake for 18 to 22 minutes until golden brown and crispy.

  • Let cool for a few minutes before serving.

Notes

Be sure to drain the sausage well to avoid excess grease in the bites.

For crispier bottoms, press the mixture firmly into the muffin cups before baking.

These bites freeze beautifully—perfect for meal prep!
