Ingredients

1 lb. lean ground beef

1 cup uncooked long-grain white rice

2 cups beef broth or water

1 small onion, diced

3 cloves garlic, minced

1 tbsp olive oil

1 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1 cup shredded cheddar or Mexican blend cheese

6 large flour tortillas

1 cup diced tomatoes
-
1 cup shredded lettuce

1/2 cup sour cream

Optional salsa, jalapeños, avocado slices
Instructions

Rinse rice and cook with broth in a saucepan until tender, about 15 minutes. Fluff and set aside.

Heat olive oil in a skillet, sauté onion for 2 to 3 minutes, then add garlic and cook briefly.

Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.

Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for 2 minutes.

Mix cooked rice into the beef and stir until evenly combined.

Warm tortillas in a skillet or microwave until soft.
