Ingredients

  • 1½ lbs beef belly, cut into cubes

  • 4 large eggs, boiled and peeled

  • 3 tbsp oyster sauce

  • 2 tbsp soy sauce

  • 1 tbsp dark soy sauce

  • 1 tbsp brown sugar

  • 1 tbsp vegetable oil

  • 4 cloves garlic, minced

  • 1 small onion, sliced

  • 1 tsp grated ginger

  • 1 cup beef broth or water

  • ½ tsp black pepper

  • 1 tsp cornstarch mixed with 1 tbsp water

  • 2 green onions, sliced


Instructions

  • Boil eggs for 9–10 minutes, cool them in cold water, peel, and set aside.

  • Heat oil in a pan and sear beef belly pieces until browned.

  • Add onion, garlic, and ginger and cook until fragrant.

  • Stir in oyster sauce, soy sauce, dark soy sauce, broth, sugar, and pepper.

  • Reduce heat and simmer for about 30 minutes until the beef becomes tender.

  • Add the boiled eggs and simmer another 10 minutes while turning them gently in the sauce.

  • Stir in the cornstarch slurry if a thicker sauce is desired and cook for 2 minutes.

  • Garnish with green onions and serve hot with steamed rice
