2 cups mashed potatoes

1 cup shredded cheddar cheese

2 green onions, finely chopped

2 tbsp unsalted butter, melted

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1/2 cup all-purpose flour

1 large egg
-
1 cup breadcrumbs

2 tbsp fresh parsley, chopped

2 cups vegetable oil for frying
Instructions

Place mashed potatoes in a mixing bowl. Add cheddar cheese, green onions, butter, garlic powder, onion powder, salt, pepper, and parsley. Mix until well combined.

Add the egg and flour to the mixture and stir until it forms a thick dough-like consistency.

Refrigerate the mixture for about 20 to 30 minutes to help it firm up.

Scoop about 1 tablespoon of the chilled mixture and roll it into small balls. Place them on a tray.

Roll each ball lightly in flour, dip into beaten egg, then coat with breadcrumbs.

Heat vegetable oil in a deep pan to about 350°F (175°C).

Fry the potato bites in small batches for 2 to 3 minutes until golden and crispy.

Remove and place on paper towels to drain excess oil, then serve warm with your favorite dipping sauce.
