2 lbs. ground venison

1 cup finely chopped onion

2 cloves garlic, minced

1 cup fresh breadcrumbs

1/2 cup whole milk

2 large eggs

1/4 cup ketchup, plus extra for glaze

2 tbsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1 tsp smoked paprika

1 tsp dried thyme

1/2 tsp dried rosemary

2 tbsp fresh parsley, chopped

Optional: 1/2 cup grated Parmesan
Instructions

Preheat oven to 350°F (175°C) and grease a loaf pan.

Combine breadcrumbs and milk in a bowl; let soak for 5 minutes.

In a large bowl, mix venison, onion, garlic, eggs, ketchup, Worcestershire sauce, salt, pepper, paprika, thyme, rosemary, parsley, and soaked breadcrumbs.

Shape mixture into a loaf and place in the prepared pan.
