Ingredients

  • 2 lbs. ground venison

  • 1 cup finely chopped onion

  • 2 cloves garlic, minced

  • 1 cup fresh breadcrumbs

  • 1/2 cup whole milk

  • 2 large eggs

  • 1/4 cup ketchup, plus extra for glaze

  • 2 tbsp Worcestershire sauce

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp smoked paprika

  • 1 tsp dried thyme

  • 1/2 tsp dried rosemary

  • 2 tbsp fresh parsley, chopped

  • Optional: 1/2 cup grated Parmesan


Instructions

  • Preheat oven to 350°F (175°C) and grease a loaf pan.

  • Combine breadcrumbs and milk in a bowl; let soak for 5 minutes.

  • In a large bowl, mix venison, onion, garlic, eggs, ketchup, Worcestershire sauce, salt, pepper, paprika, thyme, rosemary, parsley, and soaked breadcrumbs.

  • Shape mixture into a loaf and place in the prepared pan.

  • Spread ketchup glaze over the top.

  • Bake for 55–65 minutes or until internal temperature reaches 160°F (71°C).

  • Let rest 10 minutes before slicing and serving.
