Ingredients

  • 1½ lbs boneless, skinless chicken thighs

  • 2 stalks fresh lemongrass, finely minced

  • 4 cloves garlic, minced

  • 1 tablespoon fish sauce

  • 1 tablespoon soy sauce

  • 1 tablespoon brown sugar

  • 1 tablespoon neutral oil

  • 1 teaspoon sesame oil

  • ½ teaspoon black pepper

  • 1 teaspoon lime juice

  • Optional green onions and cilantro for garnish


Instructions

  • Trim and finely mince the tender inner part of the lemongrass.

  • In a bowl, mix lemongrass, garlic, fish sauce, soy sauce, brown sugar, oils, pepper, and lime juice.

  • Add chicken and coat thoroughly. Marinate in the refrigerator for at least 30 minutes.

  • Heat a skillet over medium-high heat and cook chicken 5 to 6 minutes per side until caramelized and fully cooked.

  • Rest for 5 minutes, slice, garnish, and serve warm
