Ingredients

2 lbs russet potatoes, peeled and diced

1 medium onion, finely diced

2 celery stalks, chopped

4 cloves garlic, minced

3 cups chicken broth

1 1/2 cups heavy cream

1 1/2 tbsp Cajun seasoning

1 tsp smoked paprika

1 cup shredded cheddar cheese

4 slices cooked bacon, crumbled

Salt and pepper to taste

Instructions

Dice potatoes, onion, celery, and garlic.

Sauté onion, celery, and garlic for 2–3 minutes.

Add potatoes, sautéed vegetables, spices, and broth to the slow cooker and stir.

Cook on LOW 6–7 hours or HIGH 3–4 hours.

Stir in heavy cream and cheddar during the last 30 minutes.

Mash some potatoes if desired for thickness.
