1 lb. ground beef, lean

6 slices bacon, diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 cup frozen corn kernels

1 (15 oz.) can black beans, drained and rinsed

1 (10 oz.) can diced tomatoes with green chilies

1 cup shredded cheddar cheese

1/2 cup sour cream

1 tsp smoked paprika

1 tsp chili powder

1/2 tsp black pepper

1/2 tsp salt

2 cups cooked rice

2 tbsp chopped fresh parsley or green onions for garnish
Instructions

Dice bacon, onion, and bell peppers. Mince garlic and rinse black beans.

Cook diced bacon in a skillet until crisp. Remove and drain.

Brown ground beef with onion and garlic in the same skillet, seasoning with paprika, chili powder, salt, and black pepper.

Place beef and bacon in the slow cooker. Add bell peppers, corn, black beans, and diced tomatoes with chilies. Stir gently.

Layer cooked rice over the mixture. Top with shredded cheddar cheese. Cover and cook on low for 3–4 hours or high for 1.5–2 hours.
