Ingredients

  • 1 lb. ground beef, lean

  • 6 slices bacon, diced

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 1 cup frozen corn kernels

  • 1 (15 oz.) can black beans, drained and rinsed

  • 1 (10 oz.) can diced tomatoes with green chilies

  • 1 cup shredded cheddar cheese

  • 1/2 cup sour cream

  • 1 tsp smoked paprika

  • 1 tsp chili powder

  • 1/2 tsp black pepper

  • 1/2 tsp salt

  • 2 cups cooked rice

  • 2 tbsp chopped fresh parsley or green onions for garnish


Instructions

  • Dice bacon, onion, and bell peppers. Mince garlic and rinse black beans.

  • Cook diced bacon in a skillet until crisp. Remove and drain.

  • Brown ground beef with onion and garlic in the same skillet, seasoning with paprika, chili powder, salt, and black pepper.

  • Place beef and bacon in the slow cooker. Add bell peppers, corn, black beans, and diced tomatoes with chilies. Stir gently.

  • Layer cooked rice over the mixture. Top with shredded cheddar cheese. Cover and cook on low for 3–4 hours or high for 1.5–2 hours.

  • Stir in sour cream before serving. Garnish with chopped parsley or green onions. Serve hot.
