- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup sourdough discard
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/2 cup whole milk
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 2 tbsp poppy seeds
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup powdered sugar
- 2 tbsp lemon juice (for glaze)
Instructions
- Preheat oven to 350°F and grease a 9×5-inch loaf pan.
- Whisk together flour, baking powder, baking soda, salt, and poppy seeds.
- In another bowl, mix eggs, sugar, melted butter, milk, sourdough discard, lemon juice, zest, and vanilla.
- Fold wet ingredients into dry ingredients until just combined.
- Pour batter into the loaf pan and smooth the top.
- Bake for 50 to 60 minutes until a toothpick comes out clean.
- Cool for 10 minutes, then transfer to a rack.
- Mix powdered sugar with lemon juice and drizzle over the cooled loaf.
- Slice and serve.
