Ingredients

  • 2 cups cooked jasmine rice

  • 1 can (12 oz) spam, diced

  • 2 large eggs, beaten

  • 1 medium carrot, finely diced

  • 1/2 cup frozen peas

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 3 tablespoons soy sauce

  • 1 tablespoon oyster sauce (optional)

  • 2 teaspoons sesame oil

  • 2 tablespoons vegetable oil

  • 2 green onions, sliced

  • Salt and black pepper to taste


Instructions

  • Prepare rice and ingredients, ensuring rice is cold and vegetables are chopped.

  • Heat oil and fry diced spam until golden and crispy, then remove from pan.

  • Scramble eggs in the same pan, remove slightly undercooked.

  • Sauté onions and garlic until fragrant, then add carrots and peas, cooking until softened.

  • Stir-fry rice on high heat for 3–4 minutes, breaking up clumps.

  • Return spam and eggs, add soy sauce, oyster sauce, and sesame oil. Toss thoroughly.

  • Season with salt and pepper, garnish with green onions, and serve immediately.
