2 packs (6 oz / 170 g) ramen noodles

4 cups (960 ml) chicken or vegetable broth

1 tablespoon (15 ml) soy sauce

1 tablespoon (15 ml) sesame oil

1–2 tablespoons (15–30 g) chili garlic paste

3 cloves garlic, minced

1 tablespoon (12 g) fresh ginger, grated

1 tablespoon (12 g) brown sugar

1 cup (70 g) sliced mushrooms

1 cup (75 g) baby spinach

2 soft-boiled eggs

2 chopped scallions
-
1 sheet nori, sliced

1 tablespoon (10 g) toasted sesame seeds

Optional cooked chicken, shrimp, or tofu
Instructions

Heat sesame oil in a pot and sauté garlic and ginger until fragrant.

Add mushrooms and cook for 2–3 minutes.

Pour in broth, soy sauce, brown sugar, and chili garlic paste; simmer 5–7 minutes.

Cook ramen noodles separately, then drain.

Add spinach to broth and adjust spice level.
