  • 1/2 cup unsalted butter, softened

  • 1 1/2 cups powdered sugar

  • 1/4 cup strawberry puree


Instructions

  • Sift almond flour and powdered sugar together and set aside.

  • Whip egg whites until foamy, then add granulated sugar and beat to stiff peaks.

  • Fold dry ingredients into meringue until batter flows smoothly.

  • Pipe batter onto lined baking sheets and let rest until dry to the touch.

  • Reduce champagne by half and cool.

  • Beat butter with powdered sugar, then mix in strawberry puree and champagne reduction.
