Ingredients

2 lbs. boneless, skinless chicken breasts or thighs

1 cup pineapple juice

½ cup soy sauce

¼ cup honey

1 cup pineapple chunks

3 cloves garlic, minced

1 small onion, diced

2 tbsp. rice vinegar or apple cider vinegar

1 tsp. ginger

¼ tsp. red pepper flakes

1 tbsp. cornstarch mixed with 2 tbsp. water

Salt and pepper to taste

Fresh chopped green onions for garnish
Instructions

Rinse and pat dry the chicken, then season with salt and pepper. Dice onions and mince garlic.

Optional: Sear chicken in a hot skillet for 2–3 minutes per side.

In a bowl, mix pineapple juice, soy sauce, honey, garlic, vinegar, ginger, and red pepper flakes.

Place chicken, onions, and pineapple chunks in crockpot and pour sauce over.

Cover and cook on low for 4–6 hours or high for 2–3 hours.

Mix cornstarch with water and stir into crockpot 15 minutes before serving to thicken sauce.
