Ingredients

  • 2 lbs. boneless, skinless chicken breasts or thighs

  • 1 cup pineapple juice

  • ½ cup soy sauce

  • ¼ cup honey

  • 1 cup pineapple chunks

  • 3 cloves garlic, minced

  • 1 small onion, diced

  • 2 tbsp. rice vinegar or apple cider vinegar

  • 1 tsp. ginger

  • ¼ tsp. red pepper flakes

  • 1 tbsp. cornstarch mixed with 2 tbsp. water

  • Salt and pepper to taste

  • Fresh chopped green onions for garnish


Instructions

  • Rinse and pat dry the chicken, then season with salt and pepper. Dice onions and mince garlic.

  • Optional: Sear chicken in a hot skillet for 2–3 minutes per side.

  • In a bowl, mix pineapple juice, soy sauce, honey, garlic, vinegar, ginger, and red pepper flakes.

  • Place chicken, onions, and pineapple chunks in crockpot and pour sauce over.

  • Cover and cook on low for 4–6 hours or high for 2–3 hours.

  • Mix cornstarch with water and stir into crockpot 15 minutes before serving to thicken sauce.

  • Garnish with green onions and serve over rice, quinoa, or garlic pasta with bacon.
