  • 4 tbsp unsalted butter, softened

  • 4 cloves garlic, minced

  • 2 tbsp fresh rosemary, chopped

  • 2 tbsp fresh thyme, chopped

  • 1 tbsp Dijon mustard

  • 1.5 tsp kosher salt

  • 1 tsp black pepper

  • 1 tsp smoked paprika

  • 1 tbsp lemon zest


Instructions

  • Preheat oven to 425°F and pat beef dry, then season with salt and pepper.

  • Sear the tenderloin in hot oil on all sides until browned.

  • Mix butter, garlic, herbs, Dijon, paprika, and lemon zest, then spread over the meat.

  • Roast until internal temperature reaches 125°F for medium-rare.

  • Rest 10 to 15 minutes, slice, and serve.
