Ingredients

  • 2 cups all-purpose flour

  • 2 tablespoons granulated sugar

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 2 large eggs

  • 1 3/4 cups whole milk

  • 1/4 cup melted unsalted butter

  • 1 teaspoon vanilla extract

  • 1 cup fresh mango, diced

  • 1 cup fresh raspberries

  • 1 tablespoon flour for tossing fruit

  • Optional 1 tablespoon turbinado sugar


Instructions

  • Preheat oven to 400°F and warm a 9×13-inch baking tray for 5 minutes.

  • Whisk flour, sugar, baking powder, and salt in a large bowl.

  • In another bowl, beat eggs and mix with milk, melted butter, and vanilla.

  • Combine wet and dry ingredients and stir gently until just mixed.

  • Toss mango and raspberries with flour and fold into batter.

  • Pour batter into prepared tray and spread evenly.

  • Bake for 20 to 25 minutes until golden and set in the center.

  • Cool slightly, slice, and serve warm.
