Ingredients

Scale
  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1/2 cup breadcrumbs

  • 1/4 cup fresh parsley, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1/2 teaspoon smoked paprika

  • Zest of 1 lemon

  • 2 tablespoons lemon juice

  • 1 large egg, lightly beaten

  • Salt and pepper, to taste

  • 2 tablespoons olive oil

Yogurt Sauce:

  • 1/2 cup Greek yogurt

  • 1 teaspoon lemon juice

  • 1 teaspoon olive oil

  • 1/2 teaspoon garlic powder

  • Salt and pepper, to taste


Instructions

  • Mash chickpeas in a large bowl and mix with breadcrumbs, parsley, garlic, cumin, paprika, lemon zest, lemon juice, egg, salt, and pepper.

  • Form mixture into 8 patties and chill for 15–20 minutes.

  • Whisk together yogurt, lemon juice, olive oil, garlic powder, salt, and pepper for the sauce.

  • Heat olive oil in a skillet over medium heat and fry patties 3–4 minutes per side until golden brown.

  • Serve warm with yogurt sauce and garnish with parsley and lemon wedges.
