Ingredients

  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 2 celery stalks, chopped
  • 1 cup shredded carrots
  • 3 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups cooked shredded chicken breast
  • 1 lb potato gnocchi
  • 2 cups half-and-half
  • 1 cup chopped spinach
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg (optional)

Instructions

  • Heat butter and olive oil in a large pot over medium heat.
  • Add onion, celery, and carrots, then cook until softened.
  • Stir in garlic and cook for 30 seconds.
  • Add flour and stir for 1 minute.
  • Slowly whisk in chicken broth until smooth.
  • Add shredded chicken and seasonings.
  • Simmer for 8 minutes.
  • Add gnocchi and cook until it floats.
  • Stir in half-and-half and spinach.
  • Cook until spinach wilts, then serve hot
