Ingredients

  • 2 ½ cups (315 g) all-purpose flour, sifted

  • 1 tsp baking powder

  • ½ tsp salt

  • ¾ cup (170 g) vegan butter, softened

  • ¾ cup (150 g) organic cane sugar

  • ¼ cup (60 ml) unsweetened plant-based milk

  • 1 tsp pure vanilla extract

  • 2 tsp lemon juice

  • 2 cups (250 g) powdered sugar, sifted

  • 3 tbsp aquafaba (chickpea water)

  • ½ tsp vanilla extract

  • Food coloring as desired


Instructions

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

  • Sift flour, baking powder, and salt in a medium bowl.

  • Cream vegan butter and sugar until light and fluffy.

  • Mix in plant-based milk, vanilla, and lemon juice.

  • Gradually fold in dry ingredients until dough forms.

  • Chill dough for 30–60 minutes.

  • Roll dough to ¼ inch thickness and cut with cookie cutters.

  • Bake for 10–12 minutes until edges are lightly golden. Cool completely.

  • Whip aquafaba until foamy, gradually add powdered sugar and vanilla, and beat to thick peaks. Color as desired.

  • Decorate cookies, letting icing dry completely before storing or serving.
