Ingredients

2 ½ cups (315 g) all-purpose flour, sifted

¾ cup (170 g) vegan butter, softened

¾ cup (150 g) organic cane sugar

¼ cup (60 ml) unsweetened plant-based milk

1 tsp pure vanilla extract

2 tsp lemon juice

2 cups (250 g) powdered sugar, sifted

3 tbsp aquafaba (chickpea water)

½ tsp vanilla extract

Food coloring as desired
Instructions

Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

Sift flour, baking powder, and salt in a medium bowl.

Cream vegan butter and sugar until light and fluffy.

Mix in plant-based milk, vanilla, and lemon juice.

Gradually fold in dry ingredients until dough forms.

Chill dough for 30–60 minutes.

Roll dough to ¼ inch thickness and cut with cookie cutters.

Bake for 10–12 minutes until edges are lightly golden. Cool completely.

Whip aquafaba until foamy, gradually add powdered sugar and vanilla, and beat to thick peaks. Color as desired.
