Ingredients

2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup granulated sugar

2 large eggs

1 cup plain full-fat yogurt

1/2 cup vegetable oil

2 teaspoons vanilla extract

Zest of 1 lemon (optional)

1 1/2 cups fresh blueberries

1 tablespoon flour for coating blueberries
Instructions

Preheat oven to 350°F and grease a 9-inch round cake pan.

Whisk flour, baking powder, baking soda, and salt in a bowl.

In another bowl, whisk sugar and eggs until pale. Add yogurt, oil, vanilla, and lemon zest.

Combine dry ingredients with wet ingredients and mix gently.

Toss blueberries with flour and fold into batter.

Pour batter into pan and bake for 45 to 55 minutes.

Cool for 10 minutes in pan, then transfer to rack before slicing.
