Sunshine in cookie form. These lemon frosted cookies are soft, tangy, and impossible to stop at just one.


Ingredients

  • 2 ½ cups all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon fine sea salt

  • ¾ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1 large egg

  • 2 tablespoons fresh lemon zest

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon vanilla extract

  • 2 cups powdered sugar

  • 2–3 tablespoons fresh lemon juice for frosting


Instructions

  • Preheat oven to 350°F and line baking sheets with parchment paper.

  • Whisk flour, baking powder, baking soda, and salt in a bowl.

  • Beat butter and sugar until fluffy. Add egg, lemon zest, lemon juice, and vanilla.

  • Gradually mix dry ingredients into wet ingredients until just combined.

  • Scoop dough onto baking sheets and slightly flatten.

  • Bake 9 to 11 minutes until edges are lightly golden. Cool completely.

  • Mix powdered sugar with lemon juice to form a thick glaze.

  • Spread frosting over cooled cookies and let set before serving
