Sunshine in cookie form. These lemon frosted cookies are soft, tangy, and impossible to stop at just one.
Ingredients

2 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon fine sea salt

¾ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

2 tablespoons fresh lemon zest

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

2 cups powdered sugar
-
2–3 tablespoons fresh lemon juice for frosting
Instructions

Preheat oven to 350°F and line baking sheets with parchment paper.

Whisk flour, baking powder, baking soda, and salt in a bowl.

Beat butter and sugar until fluffy. Add egg, lemon zest, lemon juice, and vanilla.

Gradually mix dry ingredients into wet ingredients until just combined.

Scoop dough onto baking sheets and slightly flatten.

Bake 9 to 11 minutes until edges are lightly golden. Cool completely.

Mix powdered sugar with lemon juice to form a thick glaze.

Spread frosting over cooled cookies and let set before serving
