- 1 cup (240 ml) apple cider, reduced to 1/2 cup (120 ml)
- 1/2 cup (113 g) unsalted butter, melted
- 1 cup (200 g) packed light brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 1/2 cups (188 g) all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup (100 g) finely chopped apple, optional
- 1/2 cup (60 g) chopped pecans or walnuts, optional
Instructions
- Reduce the apple cider in a saucepan over medium heat until it measures 1/2 cup, then cool completely.
- Preheat the oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
- Whisk the melted butter and brown sugar until smooth and glossy.
- Add the egg, vanilla, and cooled reduced cider, whisking until evenly combined.
- Whisk the flour, cinnamon, nutmeg, baking powder, and salt in a separate bowl.
- Fold the dry ingredients into the wet mixture just until combined.
- Fold in the chopped apple and nuts if using.
- Spread the batter evenly in the prepared pan and bake for 25 to 32 minutes, until the edges are set and the center remains slightly soft.
- Cool completely in the pan, lift out using the parchment, and cut into squares.
