- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon

- 1/2 cup (113 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup (120 ml) buttermilk
- 2 cups (250 g) peeled and finely chopped apples
- 1 cup (110 g) chopped pecans
- 1/2 cup (113 g) unsalted butter for glaze
- 1 cup (200 g) packed light brown sugar
- 1/4 cup (60 ml) heavy cream
- 1 teaspoon vanilla extract for glaze
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch round or square baking pan.
- Whisk flour, baking soda, cinnamon, salt, and nutmeg together in a medium bowl.
- Beat softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla extract.
- Alternately add the dry ingredients and buttermilk, mixing gently until just combined.
- Fold in the chopped apples and pecans.
- Spread batter evenly into the prepared pan.
- Bake for 40 to 50 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Melt butter for the glaze in a saucepan over medium-low heat.
- Add brown sugar and heavy cream, stirring until smooth and gently bubbling.
- Remove from heat and stir in vanilla and salt.
- Cool the cake for 10 to 15 minutes, then transfer to a serving plate.
- Drizzle warm caramel glaze over the cake and serve warm or at room temperature
