- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup (113 g) unsalted butter, softened
- 3/4 cup (150 g) packed brown sugar
- 1/4 cup (50 g) granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 4 oz. (113 g) cream cheese, softened
- 1/4 cup (30 g) powdered sugar
- 1/2 teaspoon vanilla extract
- 1 medium apple, peeled and finely diced
- 1 tablespoon (14 g) butter
- 1 tablespoon (12 g) brown sugar
- 1/2 teaspoon cinnamon
- 1 teaspoon lemon juice
Instructions
- Beat the cream cheese, powdered sugar, and vanilla until smooth. Portion into small teaspoons and chill until firm.
- Cook diced apple with butter, brown sugar, cinnamon, and lemon juice for 3 to 5 minutes until slightly tender. Cool completely.
- Whisk flour, baking soda, salt, and cinnamon together in a bowl.
- Beat softened butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in the egg and vanilla until smooth.
- Gradually add the dry ingredients and mix just until combined.
- Flatten portions of dough and place chilled cheesecake filling and a small amount of apple filling in the center.
- Fold the dough around the filling and seal completely, then roll gently into a ball.
- Chill assembled cookies for 15 to 20 minutes.
- Bake at 350°F (175°C) for 11 to 14 minutes, until the edges are lightly golden and set.
- Cool on the baking sheet for 5 minutes, then transfer to a rack to cool completely.
