- 1 cup (226 g) unsalted butter, softened
- 1 1/4 cups (250 g) granulated sugar
- 1/2 cup (100 g) light brown sugar, packed
- 2 large eggs
- 2 teaspoons (10 ml) vanilla extract
- 2 1/2 cups (313 g) all-purpose flour
- 1 teaspoon (5 g) baking powder
- 1/2 teaspoon (3 g) salt
- 1 1/2 cups (180 g) peeled and finely diced apples
- 1/4 cup (50 g) granulated sugar for topping
- 1 1/2 teaspoons ground cinnamon for topping
Instructions
- Preheat the oven to 350°F (175°C) and line a 9 x 13-inch (23 x 33 cm) baking pan with parchment paper.
- Cream the softened butter, granulated sugar, and brown sugar until smooth and creamy.
- Beat in the eggs one at a time, then mix in the vanilla extract.
- Whisk together the flour, baking powder, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture and mix just until combined.
- Gently fold the diced apples into the batter.
- Spread the batter evenly into the prepared pan.
- Mix the topping sugar and cinnamon, then sprinkle it evenly over the batter.
- Bake for 28 to 35 minutes, until the edges are golden and the center is slightly soft.
- Cool completely before lifting from the pan and slicing into bars.
