Description

These cheesy artichoke and spinach bites are the kind of appetizer that disappears fast. They are creamy, golden, savory, and perfect for sharing at any gathering.


Ingredients

  • 1 cup finely chopped cooked spinach (150 g)
  • 1 cup finely chopped canned or jarred artichoke hearts (170 g)
  • 4 oz. cream cheese (113 g)
  • 1/2 cup shredded mozzarella cheese (50 g)
  • 1/3 cup grated Parmesan cheese (30 g)
  • 1 large egg
  • 1/2 cup breadcrumbs (55 g)
  • 2 garlic cloves, minced
  • 1/2 tsp. Italian seasoning
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 2 tbsp. finely chopped fresh parsley (8 g), optional
  • Cooking spray or 1 tbsp. olive oil

Instructions

  • Preheat oven to 400°F (200°C) and prepare a lined or lightly greased baking sheet.
  • Finely chop the spinach and artichoke hearts, making sure both vegetables are thoroughly drained.
  • Mix cream cheese, mozzarella, Parmesan, egg, breadcrumbs, garlic, Italian seasoning, salt, and pepper in a large bowl.
  • Fold the spinach and artichokes into the cheese mixture until evenly combined.
  • Chill the mixture for 15 to 20 minutes if it feels too soft to shape.
  • Scoop about 1 tablespoon of mixture and roll it into a small ball.
  • Roll each bite in additional breadcrumbs if desired and arrange on the prepared baking sheet.
  • Lightly spray or brush the bites with oil for extra browning.
  • Bake for 18 to 22 minutes, until firm and lightly golden.
  • Rest for 5 minutes, then serve warm with your favorite dipping sauce.
