- 5 tablespoons (70 g) unsalted butter, melted
- 24 ounces (680 g) full-fat cream cheese, softened
- 1 cup (200 g) granulated sugar
- 3 large eggs
- 1 cup (240 g) sour cream
- 2 teaspoons (10 ml) vanilla extract
- 1 tablespoon (15 ml) lemon juice
- 1 cup (240 g) strawberry preserves or seedless strawberry jam
- 12 vanilla sandwich cookies, crushed
- 1 cup (100 g) freeze-dried strawberries, crushed
- 3 tablespoons (42 g) unsalted butter, melted
- 1 cup (240 ml) heavy whipping cream
- 2 tablespoons powdered sugar
- Fresh strawberries, for decorating
Instructions
- Preheat the oven to 325°F (163°C) and line a 9-inch springform pan with parchment paper.
- Mix crushed vanilla cookies with melted butter and press firmly into the bottom of the pan.
- Bake the crust for 8 to 10 minutes, then cool.
- Beat softened cream cheese and sugar until smooth and creamy.
- Add the eggs one at a time, mixing gently after each addition.
- Mix in sour cream, vanilla extract, and lemon juice until smooth.
- Spread half of the cheesecake batter over the cooled crust.
- Add spoonfuls of strawberry preserves, then cover with the remaining cheesecake batter.
- Gently swirl the strawberry layer with a thin knife.
- Bake for 55 to 70 minutes, until the edges are set and the center slightly jiggles.
- Turn off the oven, crack the door, and let the cheesecake cool inside for 30 minutes.
- Cool completely at room temperature, then refrigerate for at least 6 hours or overnight.
- Combine crushed vanilla cookies, freeze-dried strawberries, and melted butter to make the crunch topping.
- Whip heavy cream with powdered sugar until soft peaks form.
- Decorate the chilled cheesecake with whipped cream, strawberry crunch topping, and fresh strawberries.
- Slice with a sharp, warmed knife and serve chilled.
