- 2 cups fresh blueberries
- ¼ cup granulated sugar
- 1 tbsp cornstarch
- 2 tbsp water
- 1 tsp lemon zest (optional)
- Fresh mint leaves for garnish
Instructions
- Combine graham cracker crumbs, melted butter, and sugar.
- Press the mixture into serving cups and chill.
- Beat cream cheese until smooth.
- Mix in powdered sugar, vanilla, and lemon juice.
- Whip the heavy cream until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture.
- Fill each cup with the cheesecake mixture.
- Cook blueberries with sugar, cornstarch, and water until thickened.
