Summer produce never looked this delicious. This colorful salad brings sweet, juicy fruit and creamy feta together for a fresh bite everyone will want seconds of.


Ingredients

  • 5 oz. (140 g) mixed greens
  • 2 ripe peaches, about 10 oz. (280 g), sliced
  • 1 cup (150 g) fresh blueberries
  • 4 oz. (115 g) feta cheese, crumbled
  • 1/3 cup (40 g) pecans or walnuts, toasted
  • 2 tbsp. fresh basil or mint, torn
  • 3 tbsp. (45 ml) extra-virgin olive oil
  • 1 1/2 tbsp. (22 ml) fresh lemon juice
  • 1 tbsp. (15 ml) honey
  • 1 tsp. (5 ml) Dijon mustard
  • 1/4 tsp. salt
  • 1/8 tsp. freshly ground black pepper

Instructions

  • Whisk olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper together until smooth.
  • Rinse and thoroughly dry the blueberries, then slice the peaches into thin wedges.
  • Toast the pecans or walnuts in a dry skillet over medium-low heat for 3 to 5 minutes, stirring frequently. Cool completely.
  • Add the mixed greens to a large serving bowl and arrange the peaches and blueberries over the top.
  • Sprinkle with crumbled feta, toasted nuts, and fresh basil or mint.
  • Drizzle about two-thirds of the dressing over the salad and gently toss with salad tongs.
  • Taste and adjust with additional dressing, lemon juice, salt, or pepper if desired.
  • Serve immediately for the freshest flavor and best texture.
