Instructions

  • Preheat the oven to 350°F (175°C) and lightly grease a 9-inch square baking dish.
  • Whisk together the flour, baking powder, cinnamon, nutmeg, and salt in a medium bowl.
  • In a separate bowl, whisk melted butter, brown sugar, granulated sugar, egg, vanilla, and milk until smooth.
  • Stir the finely shredded carrots into the wet mixture.
  • Add the dry ingredients and stir gently until just combined.
  • Fold in the chopped pecans without overmixing.
  • Spread the batter evenly into the prepared baking dish.
  • Mix the brown sugar and cinnamon for the sauce, then sprinkle evenly over the batter.
