- 2 lbs Yukon Gold potatoes or thinly sliced potatoes
- 2 cups whole milk
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 3 cloves garlic
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme (optional)
Instructions
- Preheat oven to 375°F and grease a baking dish.
- Peel and thinly slice potatoes evenly.
- Melt butter in a saucepan and sauté garlic.
- Whisk in flour and cook briefly.
- Gradually add milk and cream while whisking.
- Stir in cheese until smooth and creamy.
- Season with salt, pepper, and paprika.
- Layer potatoes and sauce in the baking dish.
- Cover with foil and bake for 40 minutes.
- Remove foil and bake 25 to 30 minutes until golden.
- Let rest before serving.
