Ingredients

  • 2 lbs Yukon Gold potatoes or thinly sliced potatoes
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 3 cloves garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme (optional)

Instructions

  • Preheat oven to 375°F and grease a baking dish.
  • Peel and thinly slice potatoes evenly.
  • Melt butter in a saucepan and sauté garlic.
  • Whisk in flour and cook briefly.
  • Gradually add milk and cream while whisking.
  • Stir in cheese until smooth and creamy.
  • Season with salt, pepper, and paprika.
  • Layer potatoes and sauce in the baking dish.
  • Cover with foil and bake for 40 minutes.
  • Remove foil and bake 25 to 30 minutes until golden.
  • Let rest before serving.
