Creamy, fruity, and wonderfully easy, this Cherry Chia Pudding is a make-ahead treat that tastes like dessert but fits perfectly into breakfast.

- 1 cup (240 ml) milk
- 1/4 cup (40 g) chia seeds
- 1 cup (150 g) fresh cherries, pitted and chopped
- 2 tablespoons (30 ml) pure maple syrup
- 1 teaspoon (5 ml) vanilla extract
- 1/2 teaspoon fresh lemon juice
- 1 pinch salt
Instructions
- Wash, pit, and chop the cherries into small pieces.
- Combine the milk, maple syrup, vanilla extract, lemon juice, and salt in a bowl or jar.
- Add the chia seeds and stir thoroughly until evenly distributed.
- Let the mixture sit for 10 minutes, then stir again to prevent clumps.
- Fold in the chopped cherries.
- Cover and refrigerate for at least 4 hours or overnight.
- Stir before serving and adjust the consistency with a splash of milk if needed.
- Top with fresh cherries, Greek yogurt, sliced almonds, or coconut and serve chilled.
