  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot coffee or hot water
  • 2 1/2 cups fresh strawberries, diced
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 tsp lemon juice
  • 1 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 tsp vanilla extract
  • 3 to 4 tbsp heavy cream
  • Pinch of salt
  • Fresh strawberries for garnish
  • Chocolate curls or shaved chocolate for garnish

Instructions

  • Preheat the oven to 350°F (175°C) and prepare two 8-inch cake pans with grease and parchment paper.
  • Whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • Add the eggs, milk, oil, and vanilla extract, then mix until smooth.
  • Slowly stir in the hot coffee or hot water until fully combined.
  • Divide the batter evenly between the cake pans.
  • Bake for 30 to 35 minutes or until a toothpick comes out with a few moist crumbs.
  • Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Cook the strawberries, sugar, and lemon juice in a saucepan over medium heat.
  • Stir together the cornstarch and water, then add it to the strawberries and cook until thickened. Cool completely.
  • Beat the butter until creamy, then gradually mix in the powdered sugar, cocoa powder, vanilla, salt, and heavy cream until fluffy.
  • Place one cake layer on a serving plate and pipe a buttercream border around the edge.
  • Spread the cooled strawberry filling inside the buttercream border.
  • Add the second cake layer and frost the entire cake with chocolate buttercream.
  • Decorate with fresh strawberries and chocolate curls.
  • Chill for 30 minutes before slicing and serving.
