Description

Ingredients

  • 2 cups (250 g) all-purpose flour
  • ¾ cup (65 g) unsweetened cocoa powder
  • 2 cups (400 g) granulated sugar
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup (240 ml) buttermilk
  • ½ cup (120 ml) vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup (240 ml) hot brewed coffee
  • 2½ cups (425 g) semisweet chocolate chips
  • 1½ cups (360 ml) heavy cream
  • 2 tablespoons unsalted butter
  • 2 cups (300 g) fresh strawberries, sliced
  • Whole strawberries for garnish
  • Chocolate curls or shaved chocolate for garnish

Instructions

  • Preheat the oven to 350°F (175°C). Grease and line three 8-inch cake pans.
  • Whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • Add the eggs, buttermilk, oil, and vanilla, then mix until smooth.
  • Slowly stir in the hot coffee until fully incorporated.
  • Divide the batter evenly among the prepared pans.
  • Bake for 28 to 32 minutes, then cool completely.
  • Heat the heavy cream until simmering and pour it over the chocolate chips and butter. Let sit for 5 minutes, then stir until smooth.
  • Cool the ganache until spreadable.
  • Place one cake layer on a serving plate and spread with ganache.
  • Add a layer of sliced strawberries.
  • Repeat with the second cake layer, ganache, and strawberries.
  • Top with the final cake layer.
  • Apply a thin crumb coat of ganache and chill for 20 minutes.
  • Frost the cake with the remaining ganache.
  • Decorate with whole strawberries and chocolate curls.
  • Refrigerate for at least 1 hour before slicing and serving.
