Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 tsp white vinegar
  • 1 tsp cornstarch
  • 1 tsp vanilla extract
  • 2 cups heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 2 cups mixed berries
  • 1 cup custard or pudding
  • 1/2 cup crushed meringues
  • Fresh mint leaves

Instructions

  • Preheat oven to 250°F and line a baking sheet with parchment paper.
  • Beat egg whites until soft peaks form, then gradually add sugar until stiff peaks form.
  • Fold in vinegar, cornstarch, and vanilla. Shape meringue and bake for 90 minutes, then cool in oven.
  • Whip cream with powdered sugar and vanilla until soft peaks form.
  • Prepare fruit by washing and slicing.
  • Break meringue into pieces and layer in a dish.
  • Add custard, whipped cream, and fruit in layers.
  • Repeat layers and finish with cream, fruit, and mint.
  • Serve immediately or chill briefly before serving.
