- 4 large egg whites
- 1 cup granulated sugar
- 1 tsp white vinegar
- 1 tsp cornstarch
- 1 tsp vanilla extract
- 2 cups heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 2 cups mixed berries
- 1 cup custard or pudding
- 1/2 cup crushed meringues
- Fresh mint leaves
Instructions
- Preheat oven to 250°F and line a baking sheet with parchment paper.
- Beat egg whites until soft peaks form, then gradually add sugar until stiff peaks form.
- Fold in vinegar, cornstarch, and vanilla. Shape meringue and bake for 90 minutes, then cool in oven.
- Whip cream with powdered sugar and vanilla until soft peaks form.
- Prepare fruit by washing and slicing.
- Break meringue into pieces and layer in a dish.
- Add custard, whipped cream, and fruit in layers.
- Repeat layers and finish with cream, fruit, and mint.
- Serve immediately or chill briefly before serving.
