- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1 1/2 teaspoons ground cinnamon
- 1/2 cup (113 g) unsalted butter, softened
- 3/4 cup (150 g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (120 ml) buttermilk
- 1 1/2 cups (180 g) peeled and diced apples
- 2 tablespoons (25 g) brown sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9 x 5-inch loaf pan with parchment paper.
- Whisk flour, baking powder, baking soda, salt, and cinnamon together in a medium bowl.
- Beat softened butter and granulated sugar until light and creamy, about 2 to 3 minutes.
- Beat in the eggs one at a time, then mix in the vanilla extract.
- Add the dry ingredients and buttermilk alternately, mixing gently until just combined.
- Fold the diced apples into the batter without overmixing.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Combine brown sugar and cinnamon, then sprinkle evenly over the batter.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Cool in the pan for 15 minutes, then transfer to a wire rack and cool further before slicing.
