Ingredients

Scale
  • 2 cups (240 g) all-purpose flour
  • 2 teaspoons (8 g) baking powder
  • 1/2 teaspoon (3 g) salt
  • 1 teaspoon (3 g) ground cinnamon
  • 1/2 cup (113 g) unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon (5 ml) vanilla extract
  • 3/4 cup (180 ml) whole milk
  • 2 medium apples, about 2 cups (250 g), peeled, cored, and diced
  • 3/4 cup (95 g) all-purpose flour
  • 1/2 cup (100 g) packed brown sugar
  • 1 teaspoon (3 g) ground cinnamon
  • 1/4 cup (57 g) unsalted butter, melted

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9-inch square baking pan.
  • Peel, core, and dice the apples into small, even pieces.
  • Whisk together flour, baking powder, salt, and cinnamon in a medium bowl.
  • Beat softened butter and granulated sugar until light and creamy.
  • Add the eggs one at a time, mixing after each addition, then stir in vanilla.
  • Add the dry ingredients alternately with the milk, mixing gently until just combined.
  • Fold the diced apples into the batter and spread the mixture evenly in the prepared pan.
  • Combine flour, brown sugar, and cinnamon for the crumb topping, then stir in melted butter until chunky crumbs form.
  • Sprinkle the crumb mixture evenly over the cake batter.
  • Bake for 40 to 50 minutes, until golden and a toothpick inserted in the center comes out with a few moist crumbs.
  • Cool the cake in the pan for at least 20 minutes before slicing and serving.
